If you’re looking for a nutritious Halloween breakfast (or snack) that supports your gut, try this! It’s so good. My favorite way to eat this is topped with granola but cater to your preferences. It’s also good to top with your favorite fruit, nuts, and seeds.
Pumpkin Pie Baked Yogurt
- 1 1/2 C Greek Yogurt
- 1/2 C Pumpkin Puree
- 4 Eggs
- 4 Tbsp Almond Flour
- 1 tsp Vanilla Extract
- 1 tsp Pumpkin Pie Spice
- 1/4 C Maple Syrup
- Pinch of Salt
Preheat oven to 350 F.
Mix all the ingredients together well.
Pour in baking dish- I use a 9 inch pie pan but an 8 x 8 glass Pyrex dish also works.
Bake for 38-45 minutes- keep an eye on it- you want to bake it until the center is no longer jiggly.
Let it cool, and enjoy!
