Strawberry Shortcake Popsicles

Does anyone else remember those strawberry shortcake ice cream bars from school? I used to love them and had a craving for one the other day…

So, I decided to make a more balanced version!

This version is filled with protein, vitamin C, and probiotics! With no artificial colors or flavors!

These turned out so refreshing and would be a great snack or dessert this summer as the weather heats up!

Strawberry Shortcake Popsicles


  • 1 2/3 C Cottage Cheese Good Culture 2%
  • 1-2 Tbsp Maple Syrup
  • 2/3 C Freeze-dried Strawberries
  • 8-12 Strawberry Siete Cookies
  • 1 1/2 scoops Vanilla Protein Powder optional
  • 2 tsp Vanilla Extract


  • Blend your filling ingredients together well (cottage cheese, maple syrup, 1/3 cup freeze dried strawberries, vanilla, and protein powder).
  • Crush 1/3 cup freeze dried strawberries and siete cookies in a bag.
  • Sprinkle crushed cookie mixture in your popsicle mold, add filling, add another layer of crushed cookie mixture.
  • Freeze for at least 6 hours.
