Basic Mug Muffin

This is such an easy breakfast for on-the-go! And while I do recommend that my clients try to sit down, and enjoy their food – sometimes you really just need something quick.

You’re basically making a quick, single-serve baked oatmeal – in a mug that you can easily take in the car to work. It’s rich in fiber, protein, and healthy fat, and should help keep your blood sugar balanced for hours.

You can make SO many variations of this too – adding chocolate chips, or berries, using different toppings!

Basic Mug Muffin


  • 1/2 mashed banana (very ripe)
  • 1/2 cup rolled oats
  • 1 egg
  • 1 egg white
  • 2-3 tbsp milk (of choice)
  • pinch of cinnamon, pinch of salt, 1 tbsp dark chocolate chips, 1/3 cup blueberries, etc optional

Toppings (optional)

  • Drizzle of peanut butter, greek yogurt, honey or jam!


  • Mix in a large mug or small microwave safe bowl and microwave for 3 min or until firm!
  • I love topping mine with a spoon of peanut butter, a drizzle of honey or spoon of full fat greek yogurt!
