Basic Mug Muffin

I kept telling my mom she needed to make this – and I guess she thought I was telling her to try making a ‘Mud Muffin’ for breakfast? Completely different – when I google that it sounds like it’s a chocolate dessert / or something you don’t want to look up on Urban Dictionary.

Anyway – this ‘Mug Muffin’ is something I make ALL the time for breakfast, and will often recommend to my clients! I think it’s SO important to get a good source of protein in the morning, but I personally am a big oatmeal person – and this is a sneaky way to get a little extra protein in with your oatmeal without adding protein powder or dairy!

Basic Mug Muffin

Ingredients
  

  • 1/2 mashed banana (very ripe)
  • 1/3 cup rolled oats
  • 1 egg
  • 3 tbsp milk I use cashew
  • pinch of cinnamon, pinch of salt, 1 tbsp dark chocolate chips, 1/3 cup blueberries, etc optional

Instructions
 

  • Mix in a large mug or small microwave safe bowl and microwave for 3 min or until firm!
  • I love topping mine with a spoon of peanut butter, a drizzle of honey or spoon of full fat greek yogurt!
