Cranberry Cashew ‘Perfect’ Bars

If you’re looking for the perfect, minimally processed, easy-to-make, snack… look no further. These bars have a solid amount of protein, and healthy fat which will help keep you full for longer. They’re also soft, doughy and sweet – and honestly remind me of eating a cookie dough!

I’ve also been working on trying to actively add more cranberry into my diet, because cranberry polyphenols are especially helpful in helping the growth of Akkermansia muciniphilia – a super beneficial, immune-boosting bacteria found in your gut.

There’s nothing better in my opinion than knowing I have a tasty snack that has serious health benefits too!

Cranberry Cashew ‘Perfect’ Bars

These are high in protein, but taste like dessert!

Servings 8

Ingredients
  

  • 1 c Cashew Butter
  • 1/3 c Maple Syrup
  • 1 c Egg White Powder
  • 1 tsp Vanilla Extract (or 1/4 tsp Vanilla bean paste)
  • 1/8-1/4 tsp Salt (if your cashew butter is unsalted)
  • 2-3 Tbsp Dried, Unsweetened, Cranberries

Instructions
 

  • Mix all ingredients except the cranberries together, in a large mixing bowl, until well blended.
  • Mix cranberries in last.
  • Press the dough firmly into bar molds, to form your perfect bars.
  • Flip the bars out, and roll them in strips of parchment paper, for an easy grab and go snack! I recommend storing these in the fridge.

Notes

If you pick a cashew butter that seems a bit more oily, you may want to add an additional 2 tbsp of protein powder / egg white powder. 
I also love adding cinnamon, or white chocolate chips to this recipe!
