If you’re looking for the perfect, minimally processed, easy-to-make, snack… look no further. These bars have a solid amount of protein, and healthy fat which will help keep you full for longer. They’re also soft, doughy and sweet – and honestly remind me of eating a cookie dough!
I’ve also been working on trying to actively add more cranberry into my diet, because cranberry polyphenols are especially helpful in helping the growth of Akkermansia muciniphilia – a super beneficial, immune-boosting bacteria found in your gut.
There’s nothing better in my opinion than knowing I have a tasty snack that has serious health benefits too!
Cranberry Cashew ‘Perfect’ Bars
These are high in protein, but taste like dessert!
- 1 c Cashew Butter
- 1/3 c Maple Syrup
- 1 c Egg White Powder
- 1 tsp Vanilla Extract (or 1/4 tsp Vanilla bean paste)
- 1/8-1/4 tsp Salt (if your cashew butter is unsalted)
- 2-3 Tbsp Dried, Unsweetened, Cranberries
Mix all ingredients except the cranberries together, in a large mixing bowl, until well blended.
Mix cranberries in last.
Press the dough firmly into bar molds, to form your perfect bars.
Flip the bars out, and roll them in strips of parchment paper, for an easy grab and go snack! I recommend storing these in the fridge.
If you pick a cashew butter that seems a bit more oily, you may want to add an additional 2 tbsp of protein powder / egg white powder.
I also love adding cinnamon, or white chocolate chips to this recipe!
